Ingredients
  

Pasta
  • 400 g spaghetti
  • 200 g bacon chopped
  • 3 eggs large
  • 1 cup Parmesan cheese freshly grated
  • 2 cloves garlic minced
  • 1 tsp black pepper freshly ground
  • 0.25 cup pasta cooking water reserved
  • to taste salt for pasta water
  • 2 tbsp fresh parsley optional garnish

Method
 

  1. Bring a large pot of salted water to a boil and cook spaghetti until al dente.
  2. Cook chopped bacon in a skillet over medium heat until crispy.
  3. Add minced garlic and sauté briefly until fragrant.
  4. Whisk eggs, Parmesan, and black pepper in a bowl.
  5. Reserve pasta water, then drain spaghetti.
  6. Add hot pasta to skillet and remove from heat.
  7. Pour egg mixture over pasta while tossing continuously.
  8. Add reserved pasta water gradually until creamy.
  9. Serve immediately with extra cheese and parsley.

Notes

Use freshly grated cheese and remove pan from heat before adding eggs to avoid scrambling.
