  • 1 lb bulk breakfast sausage
  • 8 oz cream cheese softened
  • 1.5 cups shredded cheddar cheese
  • 10 oz Rotel diced tomatoes & green chilies drained
  • 1.5 cups all-purpose flour
  • 0.5 tsp baking powder
  • 0.25 tsp garlic powder
  • 0.25 tsp onion powder
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Method
 

  1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine sausage and softened cream cheese until evenly blended.
  3. Add shredded cheddar cheese and drained Rotel, mixing gently.
  4. In a small bowl, whisk together flour, baking powder, garlic powder, onion powder, salt, and pepper.
  5. Gradually fold dry ingredients into the sausage mixture until sticky but moldable.
  6. Form 1–1.5 inch balls and place on prepared baking sheet.
  7. Bake 20–25 minutes until golden brown. Optionally broil 1–2 minutes for extra crispiness.
  8. Cool slightly on wire rack, garnish if desired, and serve warm.

Notes

Store leftovers in an airtight container for up to 3 days. Reheat in oven for best texture.
