Soup Base
  • 2 tbsp olive oil
  • 1 onion diced
  • 3 carrots sliced
  • 3 celery stalks sliced
  • 4 cloves garlic minced
  • 8 cups chicken broth low sodium
  • 3 cups rotisserie chicken shredded
  • 2 cups egg noodles

Method
 

  1. Heat olive oil in a large pot over medium heat.
  2. Sauté onion, carrots, and celery until softened.
  3. Add garlic and cook until fragrant.
  4. Pour in chicken broth and bring to a simmer.
  5. Add shredded chicken and egg noodles.
  6. Simmer until noodles are tender.
  7. Adjust seasoning and serve warm.

Notes

For best texture, cook noodles just until tender and add fresh herbs at the end.
