Salad
  • 6 cups baby spinach
  • 1 cup pomegranate arils
  • 2 mandarin oranges peeled and segmented
  • 0.5 red onion thinly sliced
  • 0.5 cup feta cheese crumbled
  • 0.5 cup toasted pecans
Honey Mustard Dressing
  • 3 tbsp Dijon mustard
  • 2 tbsp honey
  • 2 tbsp apple cider vinegar
  • 0.25 cup olive oil
  • salt to taste
  • black pepper to taste

Method
 

  1. Place washed and dried spinach in a large bowl.
  2. Top with pomegranate seeds, mandarin segments, red onion, feta, and toasted pecans.
  3. Whisk Dijon mustard, honey, and apple cider vinegar.
  4. Slowly drizzle in olive oil while whisking until emulsified.
  5. Season dressing with salt and pepper.
  6. Drizzle dressing over salad just before serving and toss gently.
