- Line a baking sheet with parchment paper and set aside.
- In a saucepan, combine sugar, corn syrup, and butter over medium heat until melted.
- Cook until the mixture turns deep amber, swirling occasionally.
- Remove from heat and carefully stir in bourbon and vanilla.
- Fold in chopped bacon.
- Sprinkle baking soda over the mixture and stir briefly.
- Pour onto prepared baking sheet and spread thin.
- Sprinkle with flaky sea salt and let cool completely before breaking.
Notes
Work quickly after adding baking soda, as the brittle sets fast.
