Ingredients
  

Brittle Base
  • 1 cup granulated sugar
  • 0.5 cup light corn syrup
  • 0.25 cup unsalted butter
  • 1 cup cooked bacon chopped
  • 2 tbsp bourbon
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • 0.5 tsp flaky sea salt for topping

Equipment

  • Parchment paper

Method
 

  1. Line a baking sheet with parchment paper and set aside.
  2. In a saucepan, combine sugar, corn syrup, and butter over medium heat until melted.
  3. Cook until the mixture turns deep amber, swirling occasionally.
  4. Remove from heat and carefully stir in bourbon and vanilla.
  5. Fold in chopped bacon.
  6. Sprinkle baking soda over the mixture and stir briefly.
  7. Pour onto prepared baking sheet and spread thin.
  8. Sprinkle with flaky sea salt and let cool completely before breaking.

Notes

Work quickly after adding baking soda, as the brittle sets fast.
