Ingredients
  

Salad
  • 6 large eggs
  • 2 ripe avocados
  • 1 tbsp lemon juice fresh
  • 2 tbsp Greek yogurt optional
  • 1 tbsp olive oil
  • 2 tbsp red onion finely chopped
  • 1 tbsp fresh parsley chopped
  • 0.5 tsp sea salt
  • 0.25 tsp black pepper

Method
 

  1. Boil eggs for 10–12 minutes, then cool in ice bath and peel.
  2. Chop eggs into bite-sized pieces.
  3. Mash avocados with lemon juice in a bowl.
  4. Mix in yogurt, olive oil, salt, and pepper.
  5. Fold in eggs, onion, and herbs gently.
  6. Serve immediately or refrigerate up to 24 hours.

Notes

Add extra lemon juice to prevent browning. Best consumed fresh.
