Method
- Heat olive oil and butter in a large pot over medium heat.
- Add chicken and cook until lightly browned. Remove and set aside.
- Add onion to the pot and cook until softened. Stir in garlic.
- Add apples and cook for several minutes until slightly tender.
- Return chicken to the pot and add beans, broth, and spices.
- Simmer uncovered for 20 minutes, stirring occasionally.
- Lower heat and stir in cream and white cheddar until smooth.
- Adjust seasoning and serve hot with desired garnishes.
Notes
This chili thickens as it cools. Add extra broth when reheating if needed.
