White Cheddar Apple Chicken Chili

A creamy, cozy fall chili made with tender chicken, sweet apples, white beans, and melted white cheddar cheese.

Ingredients
  

Chili Base
  • 1 lb chicken breast diced
  • 1 tbsp olive oil
  • 2 tbsp unsalted butter
  • 1 yellow onion chopped
  • 3 cloves garlic minced
  • 2 apples peeled and diced
  • 2 cups white beans drained and rinsed
  • 3 cups chicken broth
  • 1 cup heavy cream
  • 1.5 cups white cheddar cheese shredded
  • 1 tsp ground cumin
  • 1 tsp dried thyme
  • 0.5 tsp paprika
  • salt and black pepper to taste

Equipment

  • Large Pot or Dutch Oven
  • Cutting board
  • Chef’s knife
  • Wooden spoon

Method
 

  1. Heat olive oil and butter in a large pot over medium heat.
  2. Add chicken and cook until lightly browned. Remove and set aside.
  3. Add onion to the pot and cook until softened. Stir in garlic.
  4. Add apples and cook for several minutes until slightly tender.
  5. Return chicken to the pot and add beans, broth, and spices.
  6. Simmer uncovered for 20 minutes, stirring occasionally.
  7. Lower heat and stir in cream and white cheddar until smooth.
  8. Adjust seasoning and serve hot with desired garnishes.

Notes

This chili thickens as it cools. Add extra broth when reheating if needed.
