- Preheat oven to 350°F (175°C) and line a cupcake pan.
- Whisk flour, baking powder, and salt in a bowl.
- Cream butter and sugar until fluffy. Add eggs and vanilla.
- Mix in dry ingredients alternately with milk.
- Add watermelon extract and pink food coloring.
- Fill liners and bake 18–20 minutes. Cool completely.
- Beat frosting ingredients until smooth. Tint portions pink and green.
- Frost cupcakes and decorate with chocolate chips.
Notes
Use gel food coloring for brighter watermelon tones.
