  • 3 cooked beets peeled and sliced
  • 2 cucumbers sliced
  • 0.75 cup feta cheese crumbled
  • 2 tbsp fresh dill chopped
Dressing
  • 3 tbsp olive oil
  • 1.5 tbsp lemon juice fresh
  • 0.5 tsp salt to taste
  • 0.25 tsp black pepper freshly ground

Method
 

  1. Prepare cooked beets by peeling and slicing them into wedges or rounds.
  2. Slice cucumbers into thin half-moons.
  3. In a large bowl, combine beets and cucumbers.
  4. Add crumbled feta cheese and chopped dill.
  5. Whisk olive oil, lemon juice, salt, and pepper in a small bowl.
  6. Drizzle dressing over the salad and gently toss to combine.
  7. Let rest for 5–10 minutes before serving.
