Ingredients
  

Vegetable Filling
  • 2 cups mushrooms finely chopped
  • 1 cup spinach fresh
  • 1 cup carrots thinly sliced
  • 1 onion diced
  • 2 cloves garlic minced
  • 1 tbsp olive oil
Assembly
  • 1 sheet puff pastry thawed
  • 1 tbsp Dijon mustard
  • 1 egg for egg wash

Method
 

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Sauté onion and garlic in olive oil until fragrant.
  3. Add mushrooms and cook until moisture evaporates.
  4. Stir in carrots, spinach, salt, and pepper. Let cool.
  5. Roll out puff pastry and spread Dijon mustard.
  6. Add filling, wrap pastry, and seal edges.
  7. Brush with egg wash and bake 35–40 minutes until golden.
