Ingredients
  

Stew Base
  • 1.5 cups brown or green lentils rinsed
  • 2 tbsp olive oil
  • 1 onion large, diced
  • 3 cloves garlic minced
  • 8 oz cremini mushrooms sliced
  • 2 carrots diced
  • 2 celery stalks diced
  • 2 tbsp tomato paste
  • 4 cups vegetable broth
  • 1 cup crushed tomatoes

Equipment

Method
 

  1. Heat olive oil in a large pot over medium heat.
  2. Sauté onion until translucent, then add garlic.
  3. Cook mushrooms until browned.
  4. Add carrots, celery, tomato paste, and spices.
  5. Stir in lentils, broth, and tomatoes.
  6. Simmer 30–35 minutes until lentils are tender.

Notes

Add balsamic vinegar or lemon juice at the end for brightness.
