Ingredients
  

Pancake Batter
  • 2 eggs separated
  • 2 tbsp milk
  • 0.25 tsp vanilla extract
  • 0.25 cup all-purpose flour
  • 0.5 tsp baking powder
  • 2 tbsp granulated sugar
  • 0.25 tsp cream of tartar or lemon juice

Method
 

  1. Separate egg whites and yolks into two bowls.
  2. Whisk yolks with milk and vanilla until smooth.
  3. Sift in flour and baking powder; mix gently.
  4. Whip egg whites with cream of tartar and sugar until stiff peaks form.
  5. Fold meringue gently into batter in stages.
  6. Cook batter on low heat in covered pan until risen and golden, flipping once.
