Ingredients
  

Batter
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 0.5 tsp baking powder
  • 0.5 tsp salt
  • 1.5 tsp cinnamon
  • 0.5 tsp nutmeg
  • 2 eggs large
  • 0.75 cup brown sugar packed
  • 0.25 cup granulated sugar
  • 0.5 cup vegetable oil
  • 1 tsp vanilla extract
  • 1.5 cups grated zucchini lightly squeezed

Method
 

  1. Preheat oven to 350°F (175°C). Prepare a loaf pan.
  2. Whisk together dry ingredients.
  3. Mix eggs and sugars until smooth.
  4. Add oil, vanilla, and zucchini.
  5. Fold in dry ingredients gently.
  6. Pour into pan and bake 50–60 minutes.
  7. Cool before slicing.

Notes

Do not overmix. Lightly squeeze zucchini to prevent excess moisture.
