Ingredients
  

Crust
  • 1 large head cauliflower riced
  • 1 egg large
  • 1.5 cups mozzarella cheese shredded
  • 0.25 cup Parmesan cheese grated
  • 2 cloves garlic minced
  • 1 tsp Italian seasoning
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Method
 

  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Rice the cauliflower in a food processor until fine.
  3. Microwave riced cauliflower 5–6 minutes, cool completely.
  4. Squeeze out all excess moisture using a kitchen towel.
  5. Mix cauliflower with egg, cheeses, garlic, and seasonings.
  6. Press mixture into a ¼-inch thick round crust.
  7. Bake 18–22 minutes until golden and firm.
  8. Add toppings and bake another 8–10 minutes before slicing.

Notes

Be sure to squeeze out as much moisture as possible for a crispy, sliceable crust.
