Ingredients
  

  • 1 cup red lentils rinsed
  • 1 tbsp coconut oil
  • 1 onion chopped
  • 3 cloves garlic minced
  • 1 tbsp ginger grated
  • 2 tbsp red curry paste
  • 4 cups vegetable broth
  • 1 can coconut milk full-fat
  • 1 tbsp soy sauce
  • 1 lime juiced

Equipment

  • Large pot
  • Wooden spoon
  • Immersion blender (optional)

Method
 

  1. Sauté onion in oil until soft.
  2. Add garlic, ginger, and curry paste; cook until fragrant.
  3. Add lentils and broth; simmer until lentils are soft.
  4. Stir in coconut milk and soy sauce.
  5. Finish with lime juice and adjust seasoning.

Notes

Blend for smoother texture if desired.
