Ingredients
  

Base
  • 2 cups cooked white rice
Protein
  • 1 lb ground beef
  • 1 small onion diced
  • 2 cloves garlic minced
  • 2 tbsp taco seasoning
  • 0.5 cup water
Toppings
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 0.5 cup corn kernels
  • 0.5 cup black beans drained
  • 1 avocado sliced
  • 1 cup shredded cheddar cheese
  • 0.5 cup sour cream

Method
 

  1. Cook rice according to package instructions and keep warm.
  2. Heat oil in skillet and sauté onion until soft. Add garlic and cook briefly.
  3. Add ground beef and cook until browned. Drain excess fat.
  4. Stir in taco seasoning and water. Simmer until thickened.
  5. Prepare fresh toppings while beef simmers.
  6. Layer rice, beef, and toppings in bowls.
  7. Top with sour cream, cilantro, and lime juice before serving.
