Cheese Ball
  • 16 oz cream cheese softened
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 2 tbsp taco seasoning
  • 0.5 cup diced tomatoes with green chilies drained well
  • 0.25 cup green onions chopped
  • 0.25 cup black olives chopped
  • 2 tbsp fresh cilantro chopped
  • 1 tbsp lime juice
Coating
  • 1 cup crushed tortilla chips
  • 1 tbsp cilantro chopped
  • 1 tsp chili powder optional

Method
 

  1. Beat softened cream cheese until smooth in a large bowl.
  2. Mix in shredded cheeses, taco seasoning, and lime juice.
  3. Fold in tomatoes, green onions, olives, and cilantro.
  4. Shape mixture into a ball using plastic wrap.
  5. Refrigerate for at least 2 hours until firm.
  6. Roll chilled cheese ball in crushed tortilla chips and seasonings.
  7. Serve with chips or vegetables.

Notes

Drain all mix-ins well to prevent excess moisture.
