Ingredients
  

Salad
  • 3 sweet potatoes peeled and cubed
  • 2 tbsp olive oil
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 0.5 tsp smoked paprika
  • 0.5 red onion thinly sliced
  • 0.33 cup feta cheese crumbled
  • 0.25 cup fresh parsley chopped
  • 0.25 cup pecans toasted
  • 2 tbsp dried cranberries optional
Dressing
  • 3 tbsp olive oil
  • 1 tbsp lemon juice fresh
  • 1 tsp Dijon mustard
  • 1 tsp honey

Equipment

Method
 

  1. Preheat oven to 400°F (200°C). Line baking sheet with parchment paper.
  2. Toss sweet potatoes with olive oil, salt, pepper, and paprika.
  3. Roast 25–30 minutes until tender and caramelized.
  4. Whisk dressing ingredients together.
  5. Combine roasted potatoes with onion, parsley, nuts, and cranberries.
  6. Drizzle dressing and top with feta before serving.

Notes

Serve warm or chilled. Store refrigerated up to 4 days.
