Ingredients
  

Crust
  • 1.5 cups all-purpose flour
  • 0.5 cup unsalted butter softened
  • 0.5 cup brown sugar
  • 0.25 tsp salt
  • 0.5 tsp cinnamon
Filling
  • 2 cups mashed sweet potatoes cooked and cooled
  • 0.5 cup unsalted butter melted
  • 0.75 cup brown sugar
  • 2 eggs large
  • 0.5 cup milk or cream
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 0.5 tsp nutmeg
  • 0.25 tsp salt

Equipment

  • Mixing bowls
  • Baking pan
  • Wire rack
  • Hand mixer or whisk

Method
 

  1. Preheat oven to 350°F (175°C). Line a baking pan with parchment paper.
  2. Mix crust ingredients until crumbly and press firmly into the pan.
  3. Bake crust for 12–15 minutes until lightly golden.
  4. Whisk all filling ingredients until smooth.
  5. Pour filling over crust and smooth the top.
  6. Bake 35–40 minutes until set in the center.
  7. Cool completely, then refrigerate before slicing into bars.

Notes

Chill before slicing for clean edges and best texture.
