Ingredients
  

Cookie Batter
  • 2 slices artisan bread
  • 1 cup shredded mozzarella cheese
  • 4 slices provolone or fontina cheese
  • 2 tbsp sun-dried tomato pesto
  • 2 tbsp unsalted butter softened

Equipment

  • Mixing bowls
  • Baking sheet
  • Wire rack
  • Hand mixer or stand mixer

Method
 

  1. Butter one side of each bread slice evenly.
  2. Spread sun-dried tomato pesto on the unbuttered side.
  3. Layer cheeses evenly over the pesto.
  4. Top with second bread slice, buttered side out.
  5. Cook in a skillet over medium-low heat until golden and cheese melts.

Notes

Cook low and slow for best melting results.
