Ingredients
  

  • 2.5 lbs Yukon Gold potatoes cubed
  • 10 slices bacon cooked and chopped
  • 1.5 cups sharp cheddar cheese shredded
  • 0.75 cup mayonnaise
  • 0.5 cup sour cream
  • 1.5 tbsp Dijon mustard
  • 0.5 cup red onion finely diced
  • 1 tsp garlic powder
  • 0.5 tsp smoked paprika optional
  • to taste salt and black pepper
  • 2 tbsp fresh chives chopped

Method
 

  1. Boil potatoes in salted water until fork-tender. Drain and cool slightly.
  2. Whisk mayonnaise, sour cream, mustard, garlic powder, paprika, salt, and pepper.
  3. Gently fold warm potatoes into dressing.
  4. Add bacon, cheddar, onion, and chives. Mix gently.
  5. Adjust seasoning, chill at least 1 hour, and garnish before serving.

Best served chilled; flavors deepen over time.
