Ingredients
  

Spinach Mixture
  • 10 oz spinach thawed and drained
  • 1 cup breadcrumbs
  • 0.75 cup Parmesan cheese grated
  • 1 onion finely chopped
  • 2 eggs large
  • 1 tsp garlic powder
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Method
 

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Squeeze excess moisture from spinach and chop finely.
  3. In a large bowl, combine spinach, breadcrumbs, cheese, onion, eggs, and seasonings.
  4. Mix until fully combined and mixture holds together.
  5. Roll mixture into bite-sized balls and place on baking sheet.
  6. Bake for 18–22 minutes until golden brown.
  7. Cool slightly before serving.

Notes

Drain spinach thoroughly to avoid soggy texture.
