Ingredients
  

Main Ingredients
  • 14 oz extra-firm tofu pressed and cubed
  • 1 cup coconut milk full-fat
  • 2 tbsp neutral oil
  • 3 cloves garlic minced
  • 1 tbsp fresh ginger grated
  • 2 tbsp red curry paste
  • 2 tbsp soy sauce
  • 1 tbsp lime juice fresh
  • 1 tsp brown sugar or maple syrup
  • 0.5 tsp chili flakes

Equipment

  • Large skillet
  • Cutting board
  • Chef’s knife
  • Wooden spoon

Method
 

  1. Press tofu for 15 minutes, then cut into cubes.
  2. Heat oil in skillet and pan-sear tofu until golden on all sides. Remove and set aside.
  3. In the same pan, sauté garlic and ginger until fragrant.
  4. Stir in curry paste, chili flakes, and spices.
  5. Pour in coconut milk, soy sauce, lime juice, and sugar. Simmer gently.
  6. Return tofu to pan and simmer until sauce thickens.
  7. Taste, adjust seasoning, garnish, and serve.

Notes

Adjust spice level to taste and serve with rice or noodles.
