Method
- Press tofu for 15 minutes, then cut into cubes.
- Heat oil in skillet and pan-sear tofu until golden on all sides. Remove and set aside.
- In the same pan, sauté garlic and ginger until fragrant.
- Stir in curry paste, chili flakes, and spices.
- Pour in coconut milk, soy sauce, lime juice, and sugar. Simmer gently.
- Return tofu to pan and simmer until sauce thickens.
- Taste, adjust seasoning, garnish, and serve.
Notes
Adjust spice level to taste and serve with rice or noodles.
