  • 1 cup red lentils rinsed
  • 1 tbsp olive oil
  • 1 onion chopped
  • 3 cloves garlic minced
  • 1 tsp ginger grated
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp smoked paprika
  • 0.5 tsp turmeric
  • 0.5-1 tsp red chili flakes
  • 14 oz crushed tomatoes
  • 3 cups vegetable broth
  • 3 cups fresh spinach chopped
  • 0.5 lemon juiced

Method
 

  1. Heat olive oil in a large pot over medium heat.
  2. Sauté onion until soft, then add garlic and ginger.
  3. Stir in spices and cook until fragrant.
  4. Add lentils, tomatoes, and broth. Simmer 20–25 minutes.
  5. Stir in spinach and cook until wilted.
  6. Season with salt, pepper, and lemon juice before serving.

Notes

Add coconut milk for creaminess or chickpeas for extra protein.
