- Preheat oven to 375°F (190°C) and grease a baking dish or skillet.
- In a large bowl, mix cornmeal, flour, baking powder, baking soda, salt, and sugar.
- In another bowl, whisk eggs, buttermilk, and melted butter.
- Combine wet and dry ingredients until just mixed.
- Fold in corn kernels, jalapeños, and cheese if using.
- Pour batter into prepared pan and smooth the top.
- Bake for 25–30 minutes until golden and set.
- Cool slightly before slicing and serving.
