Ingredients
  

Cornbread Batter
  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1 tbsp baking powder
  • 0.5 tsp baking soda
  • 1 tsp salt
  • 1 tbsp sugar optional
  • 2 eggs large
  • 1 cup buttermilk
  • 0.5 cup unsalted butter melted
  • 1 cup corn kernels
  • 2 jalapeños diced
  • 0.5 cup cheddar cheese optional

Method
 

  1. Preheat oven to 375°F (190°C) and grease a baking dish or skillet.
  2. In a large bowl, mix cornmeal, flour, baking powder, baking soda, salt, and sugar.
  3. In another bowl, whisk eggs, buttermilk, and melted butter.
  4. Combine wet and dry ingredients until just mixed.
  5. Fold in corn kernels, jalapeños, and cheese if using.
  6. Pour batter into prepared pan and smooth the top.
  7. Bake for 25–30 minutes until golden and set.
  8. Cool slightly before slicing and serving.

Notes

Adjust jalapeño seeds to control heat level.
