  • 3 cups cooked rice day-old preferred
  • 2 tbsp neutral oil
  • 1 tbsp sesame oil
  • 1.5 tbsp garlic finely minced
  • 1-2 tbsp red chili paste adjust to taste
  • 1 tbsp soy sauce
  • 1 tsp vinegar
  • 2 green onions sliced

Equipment

  • Wok or Large Skillet
  • Spatula
  • Knife
  • Cutting board

Method
 

  1. Heat oil and sesame oil in a hot wok over high heat.
  2. Add garlic and chili paste, stir briefly until fragrant.
  3. Add optional vegetables and stir-fry quickly.
  4. Add cooked rice and spread evenly in the pan.
  5. Season with soy sauce, vinegar, salt, and pepper.
  6. Toss well and stir-fry until heated through.
  7. Add green onions, toss, and serve hot.

Notes

Use cold rice for best texture and cook on high heat for authentic restaurant flavor.
