Ingredients
  

  • 12 oz spaghetti
  • 2 tbsp olive oil
  • 3 cloves garlic minced
  • 0.5 cup sun-dried tomatoes chopped
  • 1 cup heavy cream
  • 3 cups fresh spinach
  • 0.5 cup Parmesan cheese grated
  • salt to taste
  • black pepper to taste

Method
 

  1. Cook spaghetti in salted boiling water until al dente. Reserve some pasta water and drain.
  2. Heat olive oil in a skillet and sauté garlic until fragrant.
  3. Add sun-dried tomatoes and cook briefly.
  4. Stir in cream and simmer until slightly thickened.
  5. Add spinach and cook until wilted.
  6. Toss spaghetti with sauce, adding pasta water if needed.
  7. Finish with Parmesan, salt, and pepper. Serve warm.

Notes

Add red pepper flakes for heat or protein for a heartier meal.
