- Cook spaghetti in salted boiling water until al dente. Reserve pasta water and drain.
- Heat olive oil in a skillet and sauté garlic until fragrant.
- Add sun-dried tomatoes and cook briefly.
- Pour in heavy cream and simmer until slightly thickened.
- Add spinach and cook until wilted.
- Season with salt and pepper.
- Toss in cooked spaghetti, adding pasta water if needed.
- Finish with Parmesan and serve warm.
Notes
Add red pepper flakes for heat or protein of choice for variation.
