Method
- Mix chicken, beans, corn, peppers, cheese, and spices in a bowl.
- Place filling in center of egg roll wrappers.
- Roll tightly, sealing edges with water.
- Heat oil to 350°F (175°C).
- Fry egg rolls until golden brown, 3–4 minutes per batch.
- Drain on wire rack and serve hot.
Notes
Can be baked or air fried for a lighter version.
