Ingredients
  

Egg Roll Filling
  • 2 cups cooked chicken shredded
  • 1 cup black beans drained
  • 1 cup corn kernels
  • 0.5 cup red bell pepper diced
  • 0.5 cup Monterey Jack cheese shredded
  • 1 tsp chili powder
  • 1 tsp ground cumin
  • 0.5 tsp garlic powder
Assembly
  • 12 egg roll wrappers
  • 2 cups oil for frying

Equipment

  • Mixing bowls
  • Baking sheet
  • Wire rack
  • Deep skillet or fryer

Method
 

  1. Mix chicken, beans, corn, peppers, cheese, and spices in a bowl.
  2. Place filling in center of egg roll wrappers.
  3. Roll tightly, sealing edges with water.
  4. Heat oil to 350°F (175°C).
  5. Fry egg rolls until golden brown, 3–4 minutes per batch.
  6. Drain on wire rack and serve hot.

Notes

Can be baked or air fried for a lighter version.
