Ingredients
  

Peach Filling
  • 3 cups fresh peaches peeled and diced
  • 0.25 cup brown sugar
  • 2 tbsp granulated sugar
  • 1 tsp cinnamon
  • 0.25 tsp nutmeg optional
  • 1 tsp vanilla extract
  • 1 tbsp lemon juice
  • 1 tbsp cornstarch
  • 2 tbsp water
Assembly & Frying
  • 8 egg roll wrappers
  • 2 cups vegetable oil for frying

Equipment

  • Deep skillet or fryer

Method
 

  1. Cook peaches with sugar, butter, spices, vanilla, and lemon juice until softened.
  2. Stir in cornstarch slurry and cook until thickened. Cool completely.
  3. Fill egg roll wrappers with peach mixture and roll tightly.
  4. Fry in hot oil at 350°F until golden brown.
  5. Drain and serve warm with powdered sugar or glaze.

Notes

Best served fresh and warm. Can be air fried or baked as an alternative.
