  • 1 tbsp sugar optional

  • 1 egg large
  • 0.75 cup milk
  • 2 tbsp butter or oil plus more for frying

Method
 

  1. In a bowl, whisk together cornmeal, flour, sugar, baking powder, and salt.
  2. In another bowl, mix egg, milk, and melted butter or oil.
  3. Combine wet and dry ingredients until a thick batter forms.
  4. Heat a greased skillet over medium heat.
  5. Spoon batter into skillet and flatten slightly.
  6. Cook 2–3 minutes per side until golden brown.
  7. Serve warm with butter, honey, or savory toppings.

Notes

For crispier edges, use cast iron and avoid overcrowding the pan.
