Ingredients
  

Cookie Dough
  • 2 cups blanched almond flour
  • 1 tsp baking powder
  • 0.25 tsp salt
  • 0.5 cup unsalted butter softened
  • 4 oz cream cheese softened
  • 0.75 cup powdered erythritol
  • 2 eggs large
  • 1 tsp vanilla extract

Method
 

  1. Preheat oven to 350°F (175°C). Line baking sheet with parchment paper.
  2. Beat butter and cream cheese until smooth and fluffy.
  3. Add powdered sweetener and mix until creamy.
  4. Beat in eggs and vanilla extract.
  5. Whisk almond flour, baking powder, and salt; add to wet mixture.
  6. Scoop dough onto baking sheet and flatten slightly.
  7. Bake 10–12 minutes until edges are set.
  8. Cool completely before serving.

Notes

Do not overbake to keep cookies soft.
