Ingredients
  

Cookie Dough
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 0.5 tsp salt
  • 0.75 cup unsalted butter softened
  • 0.5 cup granulated sugar
  • 0.5 cup brown sugar packed
  • 1 box instant pistachio pudding mix dry
  • 2 eggs large
  • 1 tsp vanilla extract
  • 0.5 cup chopped pistachios optional

Method
 

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Whisk together flour, baking soda, and salt in a bowl.
  3. Cream butter and sugars until light and fluffy.
  4. Add eggs, vanilla, and pistachio pudding mix. Beat until smooth.
  5. Gradually mix in dry ingredients until just combined.
  6. Fold in pistachios if using.
  7. Scoop dough onto baking sheets and bake 10–12 minutes.
  8. Cool slightly, then transfer to wire rack.

Notes

Do not overbake for best chewy texture.
