- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- Whisk together flour, baking soda, and salt in a bowl.
- Cream butter and sugars until light and fluffy.
- Add eggs, vanilla, and pistachio pudding mix. Beat until smooth.
- Gradually mix in dry ingredients until just combined.
- Fold in pistachios if using.
- Scoop dough onto baking sheets and bake 10–12 minutes.
- Cool slightly, then transfer to wire rack.
Notes
