Ingredients
  

Cookie Dough
  • 1.25 cups all-purpose flour
  • 0.75 tsp baking soda
  • 0.5 tsp baking powder
  • 0.25 tsp fine sea salt plus extra for topping
  • 0.5 cup unsalted butter softened to room temperature
  • 1 cup packed light brown sugar
  • 0.25 cup granulated white sugar
  • 1 cup creamy peanut butter not natural style
  • 1 large egg at room temperature
  • 1.5 tsp pure vanilla extract

Method
 

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, baking powder, and salt.
  3. In a large bowl, beat softened butter, brown sugar, and granulated sugar on medium-high speed for 2-3 mins until light and fluffy.
  4. Add peanut butter and beat until smooth. Add egg and vanilla extract, beat until combined.
  5. With mixer on low, gradually add dry ingredients, mixing until just combined.
  6. Scoop 1.5 tbsp portions of dough onto sheets. Flatten slightly with a fork in a crosshatch pattern. Sprinkle with coarse salt.
  7. Bake for 10-12 minutes until edges are set and centers are soft. Cool on sheet for 5 mins, then transfer to a wire rack to cool completely.

Notes

For best results, use room temperature ingredients. Do not overbake. Store in an airtight container at room temperature.
