Ingredients
  

Main
  • 3-4 lb beef chuck roast
  • 3 large yellow onions thinly sliced
  • 2 cups beef broth
  • 1 packet French onion soup mix
  • 3 cloves garlic minced
  • 3 tbsp unsalted butter
  • 1 tsp thyme
  • 1 tsp salt to taste
  • 0.5 tsp black pepper to taste

Method
 

  1. Season the beef chuck roast with salt and pepper on all sides.
  2. Sear the roast in a hot skillet with oil until browned, if desired.
  3. Layer sliced onions and garlic in the bottom of the slow cooker.
  4. Place the roast on top of the onions.
  5. Sprinkle French onion soup mix over the roast.
  6. Pour beef broth around the roast and add butter and thyme.
  7. Cover and cook on LOW for 8 hours or until tender.
  8. Shred or slice and serve with onions and gravy.

Notes

Serve with mashed potatoes or crusty bread for best results.
