Ingredients
  

Soup Base
  • 1 lb Italian sausage mild or spicy
  • 1 tbsp olive oil
  • 1 yellow onion diced
  • 3 cloves garlic minced
  • 4 cups chicken broth
  • 1 cup diced tomatoes canned
  • 1 cup heavy cream
  • 10 oz cheese tortellini refrigerated
  • 2 cups fresh spinach

Equipment

  • Skillet

Method
 

  1. Brown sausage in a skillet with olive oil. Add onion and garlic and cook until fragrant.
  2. Transfer sausage mixture to slow cooker.
  3. Add broth, diced tomatoes, seasoning, salt, and pepper. Stir well.
  4. Cook on LOW for 6–7 hours or HIGH for 3–4 hours.
  5. Stir in tortellini and heavy cream 30 minutes before serving.
  6. Add spinach during the last 10 minutes. Adjust seasoning and serve with Parmesan.

Notes

Add tortellini near the end to prevent overcooking. Freeze soup without pasta for best results.
