Method
- Brown sausage in a skillet with olive oil. Add onion and garlic and cook until fragrant.
- Transfer sausage mixture to slow cooker.
- Add broth, diced tomatoes, seasoning, salt, and pepper. Stir well.
- Cook on LOW for 6–7 hours or HIGH for 3–4 hours.
- Stir in tortellini and heavy cream 30 minutes before serving.
- Add spinach during the last 10 minutes. Adjust seasoning and serve with Parmesan.
Notes
Add tortellini near the end to prevent overcooking. Freeze soup without pasta for best results.
