Slow Cooker Coq Au Vin

Ingredients
  

Coq Au Vin
  • 6-8 pieces chicken thighs bone-in, skin-on
  • 6 slices bacon chopped
  • 2 cups baby bella mushrooms halved
  • 3 carrots sliced
  • 1 cup pearl onions
  • 4 cloves garlic minced
  • 1.5 cups red wine
  • 1 cup chicken broth
  • 2 tbsp tomato paste
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tsp thyme
  • 2 bay leaves

Equipment

  • Hand mixer or stand mixer

Method
 

  1. Cook chopped bacon in a skillet until crisp; remove and set aside.
  2. Season chicken with salt and pepper and sear in bacon fat until lightly browned.
  3. Sauté mushrooms, carrots, onions, and garlic in the same skillet for 3–5 minutes.
  4. Add chicken, bacon, and sautéed vegetables to the slow cooker.
  5. Pour in wine, broth, tomato paste, thyme, and bay leaves.
  6. Cook on LOW 7–8 hours or HIGH 4–5 hours.
  7. Optional: whisk flour with sauce to thicken, simmer 10 minutes.
  8. Serve hot, garnished with parsley.

Notes

For a lighter version, use white wine. Coq Au Vin tastes even better the next day.
