Ingredients
  

Bread Batter
  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 0.5 tsp salt
  • 0.5 cup unsalted butter softened
  • 1 cup granulated sugar
  • 2 eggs large
  • 0.75 cup milk
  • 1 tsp vanilla extract
  • 1 tbsp orange zest
  • 1.5 cups fresh cranberries

Method
 

  1. Preheat oven to 350°F (175°C). Grease and line a loaf pan with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, and salt.
  3. In a separate bowl, cream butter and sugar until light and fluffy.
  4. Add eggs one at a time, then mix in vanilla extract and orange zest.
  5. Alternate adding dry ingredients and milk, mixing just until combined.
  6. Fold in cranberries gently.
  7. Pour batter into prepared pan and smooth the top.
  8. Bake 45–55 minutes until golden and a toothpick comes out clean. Cool before slicing.

Notes

For extra flavor, toss cranberries with a tablespoon of flour before folding into batter.
