Ingredients
  

Salad
  • 3 Persian cucumbers finely diced
  • 3 Roma tomatoes finely diced
  • 0.5 red onion very finely chopped
  • 2 tbsp fresh lemon juice
  • 2 tbsp extra virgin olive oil
  • 1 tbsp fresh mint finely chopped
  • 1 tbsp fresh parsley optional
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Equipment

Method
 

  1. Finely dice cucumbers and tomatoes.
  2. Very finely chop red onion and herbs.
  3. Whisk lemon juice, olive oil, salt, and pepper.
  4. Toss everything gently until evenly coated.
  5. Chill briefly before serving.

Notes

For best texture, serve within 24 hours and drain excess liquid if needed.
