- Wash and finely dice cucumbers and tomatoes.
- Finely chop red onion and parsley.
- Combine all vegetables in a mixing bowl.
- Add dried mint, lemon juice, olive oil, salt, and pepper.

Notes
For best flavor, use very fresh vegetables and finely chop evenly.
