Ingredients
  

Baked Potatoes
  • 4 large russet potatoes
  • 1 tbsp olive oil
  • 1 tsp salt
Filling
  • 1 lb ground lamb or beef
  • 1 onion chopped
  • 2 carrots diced
  • 2 cloves garlic minced
  • 2 tbsp tomato paste
  • 1 cup beef broth
  • 1 cup peas frozen
Mashed Topping
  • 2 tbsp butter
  • 0.25 cup milk

Method
 

  1. Bake potatoes until tender and crisp.
  2. Cook ground meat with vegetables until browned.
  3. Simmer filling with broth and seasonings.
  4. Scoop and mash potato centers with butter and milk.
  5. Fill potato shells with meat mixture and top with mash.
  6. Bake again until heated through and lightly golden.

Notes

Can be made ahead and reheated in the oven.
