  • 1.5 lb baby potatoes halved
  • 1 red bell pepper sliced
  • 1 zucchini sliced
  • 1 red onion wedged
  • 3 tbsp olive oil
  • 2 cloves garlic minced
  • 1 lemon zested and juiced

Method
 

  1. Preheat oven to 400°F (200°C) and line a sheet pan.
  2. Toss potatoes with olive oil and seasonings, then roast 15–20 minutes.
  3. Add vegetables and salmon, season well.

  5. Finish with lemon juice and fresh herbs before serving.
