Method
- Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Season sweet potatoes with olive oil, salt, pepper, paprika, and oregano. Spread on half the sheet pan.
- Mix chicken marinade ingredients and coat chicken thoroughly. Add to other half of sheet pan.
- Roast 25–30 minutes until chicken reaches 165°F (75°C) and sweet potatoes are tender.
- Mix Greek yogurt, cucumber, garlic, olive oil, lemon juice, dill, salt, and pepper to make tzatziki.
- Slice chicken, plate with sweet potatoes, and drizzle with tzatziki.
Notes
Chill the tzatziki for deeper flavor.
