Sheet Pan Chicken Tzatziki and Sweet Potatoes

Ingredients
  

Chicken & Sweet Potatoes
  • 1.5 lbs boneless skinless chicken
  • 2 large sweet potatoes (cubed)
  • 3 tbsp olive oil
  • 1 lemon (zested & juiced)
  • 3 cloves garlic (minced)
  • 1 tsp oregano
  • 1 tsp paprika
  • 0.5 tsp cumin
  • 0.5 tsp red pepper flakes optional
Tzatziki
  • 1 cup Greek yogurt
  • 0.5 cucumber (grated & drained)
  • 2 cloves garlic (minced)
  • 1 tbsp lemon juice
  • 1 tbsp olive oil
  • 1 tbsp fresh dill
  • salt & pepper to taste

Equipment

  • Mixing bowls

  • Hand mixer or stand mixer

Method
 

  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Season sweet potatoes with olive oil, salt, pepper, paprika, and oregano. Spread on half the sheet pan.
  3. Mix chicken marinade ingredients and coat chicken thoroughly. Add to other half of sheet pan.
  4. Roast 25–30 minutes until chicken reaches 165°F (75°C) and sweet potatoes are tender.
  5. Mix Greek yogurt, cucumber, garlic, olive oil, lemon juice, dill, salt, and pepper to make tzatziki.
  6. Slice chicken, plate with sweet potatoes, and drizzle with tzatziki.

Notes

Chill the tzatziki for deeper flavor.
