Ingredients
  

  • 3 cups cooked jasmine rice day-old preferred
  • 200 g shrimp peeled and deveined
  • 150 g crab meat cooked
  • 2 tbsp vegetable oil
  • 2 eggs beaten
  • 1 small onion chopped
  • 2 cloves garlic minced
  • 0.5 cup carrots diced
  • 0.5 cup green peas
  • 0.5 cup red bell pepper diced
  • 3 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tsp sesame oil

Equipment

  • Wok or Large Skillet
  • Spatula
  • Mixing bowls

Method
 

  1. Cook shrimp in oil until pink, then set aside.
  2. Scramble eggs lightly and remove from pan.
  3. Sauté onion and garlic until fragrant.
  4. Add vegetables and stir-fry briefly.
  5. Add rice and sauces, tossing well.
  6. Return shrimp, eggs, and crab; mix gently.

Notes

Use day-old rice for best texture and avoid overcooking the crab.
