Ingredients
  

Orzo Base
  • 1.5 cups orzo pasta
  • 2 tbsp olive oil
Roasted Vegetables
  • 1 cup zucchini diced
  • 1 cup bell peppers chopped
  • 0.5 cup red onion sliced
  • 1 cup cherry tomatoes
  • 2 cloves garlic minced
  • 1 tsp salt
  • 0.5 tsp black pepper

Method
 

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Toss vegetables with olive oil, salt, and pepper. Spread evenly on baking sheet.
  3. Roast for 25–30 minutes until tender and lightly caramelized.
  4. Cook orzo in salted boiling water until al dente. Drain well.
  5. Combine cooked orzo with roasted vegetables and garlic. Toss gently.
  6. Adjust seasoning, garnish with herbs or cheese, and serve.
