Soup Base
  • 2 whole garlic bulbs
  • 2 tbsp olive oil
  • 1 tbsp unsalted butter
  • 1 yellow onion diced
  • 2 lb potatoes peeled and cubed
  • 4 cups vegetable or chicken broth
  • 1 cup heavy cream

Method
 

  1. Preheat oven to 400°F (200°C). Roast garlic until soft and golden.
  2. Sauté onion in butter until translucent.

  5. Stir in cream, season, and simmer briefly before serving.
