Ingredients
  

Protein
  • 1 lb boneless skinless chicken breasts diced
Seasoning
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 0.5 tsp garlic powder
  • 0.5 tsp onion powder
  • to taste salt and pepper
Vegetables & Toppings
  • 1 cup bell peppers sliced
  • 1 small onion thinly sliced
  • 0.5 cup fresh cilantro chopped
  • 1 lime cut into wedges
Cheese & Extras
  • 0.5 cup shredded cheddar or Mexican blend cheese
Base
  • 8 soft taco tortillas

Method
 

  1. Dice chicken and prep vegetables and toppings.
  2. Heat olive oil in a skillet over medium-high heat.
  3. Cook chicken with spices for 5–7 minutes until done.
  4. Add bell peppers and onions; sauté 3–4 minutes.
  5. Warm tortillas in a skillet or oven.
  6. Assemble tacos with chicken, veggies, cheese, cilantro, and lime.
  7. Add optional toppings like sour cream or avocado.
  8. Serve immediately.

Notes

Tacos are best served fresh but can be stored in airtight containers for 2 days.
