Ingredients
  

  • 1 lb fresh green beans trimmed
  • 1 cup white vinegar
  • 1 cup water
  • 2 tbsp kosher salt
  • 1 tbsp granulated sugar
  • 4 garlic cloves peeled
  • 4 sprigs fresh dill
  • 1 tsp mustard seeds
  • 0.5 tsp red pepper flakes optional

Method
 

  1. Wash and trim green beans so they fit inside jars.
  2. Pack beans into jars with garlic, dill, mustard seeds, and red pepper flakes.
  3. Combine vinegar, water, salt, and sugar in a saucepan and bring to a simmer.
  4. Pour hot brine over beans until fully submerged.
  5. Cool, seal jars, and refrigerate at least 24 hours before serving.

Notes

Flavor improves after 48 hours. Keep refrigerated.
