Ingredients
  

Pickled Beans
  • 1 lb fresh green beans trimmed
  • 1 cup white vinegar
  • 1 cup water
  • 1 tbsp kosher salt
  • 1 tbsp sugar
  • 4 cloves garlic smashed
  • 4 sprigs fresh dill
  • 1 tsp mustard seeds
  • 1 tsp black peppercorns
  • 0.5 tsp red pepper flakes optional

Equipment

Method
 

  1. Wash and trim green beans to fit jars.
  2. Pack beans into jars with dill, garlic, and spices.
  3. Bring vinegar, water, salt, and sugar to a boil.
  4. Pour hot brine over beans until submerged.
  5. Cool to room temperature, seal, and refrigerate.
  6. Chill at least 4 hours before serving.

Notes

Flavor improves after 24 hours. Store refrigerated up to 4 weeks.
