- Line a baking sheet with parchment paper.
- Mix Greek yogurt, honey, and vanilla extract until smooth.
- Spread yogurt mixture evenly onto the prepared baking sheet.
- Drizzle warmed peanut butter over yogurt and gently swirl.
- Melt chocolate chips with coconut oil until smooth.
- Drizzle melted chocolate over the yogurt layer.
- Freeze for 2–3 hours until completely firm.
- Break into pieces and store in freezer.

Let bark sit at room temperature for 1–2 minutes before breaking for cleaner pieces.
